Known for creating some of Dubai’s most acclaimed dining concepts, Chef Reif Othman has added a new chapter to his growing portfolio with CRISP, a bakery concept inspired by the flavours, craftsmanship, and traditions of Copenhagen’s celebrated baking scene.
Available through Deliveroo and at REIF Japanese Kushiyaki in Dubai Hills, CRISP brings together handcrafted breads, pastries, doughnuts, cookies, and viennoiseries with a unique blend of Nordic and Asian influences.
The idea for CRISP began in 2024 when Chef Reif spent five weeks in Copenhagen for a special pop-up. Immersed in the city’s bakery culture, he was inspired by its focus on quality ingredients, precision, and time-honoured techniques.
That experience became the foundation for CRISP, combining Scandinavian baking traditions with the multicultural flavours that have become a signature of Chef Reif’s cooking.
While rooted in Scandinavian baking, the menu also draws inspiration from Japanese and Southeast Asian cuisine, creating a bakery experience that feels both familiar and refreshingly different.
Signature items include:
CRISP also offers products designed to be enjoyed at home, including jars of Singaporean-inspired Pandan Kaya Jam and Coconut Kaya Jam. Another standout is the soft and fluffy Shokupan loaf, a Japanese milk bread perfect for breakfast or sandwiches.
Rather than following bakery trends, CRISP is built around a genuine culinary journey that connects Copenhagen’s world-class baking culture with Dubai’s diverse food scene. The result is a concept that blends Nordic craftsmanship, Japanese precision, and Southeast Asian flavours in a way that feels unique to the city.
